My husband and I took part on a chili experience with our professional guide, Chilli Olly who showed us how they grow different chilies at Edible Ornamentals chili ranch and after our tour around the plant tunnels we had the chance to taste different fresh chilies, sauces, and dips during a little journey on Scoville scale from mild to hot. Some of them are like a bonfire in your mouth.
Olly would like to show people that we should eat chili because of the taste and not just for the experience of the building heat what capsaicin causes in our body. I’ve found this really likable, so we decided to do some collaboration in the future.
The first result of this co-work is this recipe, which is a ‘Victoria sponge cake’ type of dessert with a little twist: instead of ordinary jam I’ve used one of Olly’s own creations from Nutty Professor product family, called Bonnet Berry Burst. It’s a jam made with berries and sour cherries blended with Scotch Bonnet chilies. His recommendation was a Victoria sponge cake with this jam, but I’ve changed the original recipe a little bit and since a new cake needs a good name I’ve chosen Bonfire.
INGREDIENTS
- 6 eggs
- 130 g caster sugar
- 60 g cocoa powder sifted
- Salt
- 1 tsp cinnamon
- Stabilized vanilla whipped cream
- Bonnet Berry Burst jam from Nutty Professor
INSTRUCTIONS
- For the batter separate the eggs.
- Mix the yolks with the caster sugar with your hand mixer, then stir in the sifted cocoa powder, a pinch of salt and a tsp of cinnamon.
- After that whip, the egg whites and fold the foam into the egg yolk-cocoa mixture.
- Spread the batter in a medium Swiss roll baking tray. It should be about 1,5-2 cm thick because I’ve decided to make mini cakes.
- Bake it on 180 °C, till it passes the ‘toothpick test’.
- After the sponge become cold, use a large cookie cutter for the crust circles (2 per cake).
- Spread some of Bonnet Berry Burst jam on the base sponge circle.
- Pipe stabilized vanilla whipped cream on the top and drop some jam on the cream as well.
- Finally, close the cake with the top sponge layer.
- I’ve decorated the cake with more cream, grated dark chocolate, icing sugar, and a fresh sour cherry.
The chili infused berry jam is well balanced with the cream filling and the airy chocolate crust layers. It’s so lovely to experience when you will start to feel the heat but the cream is there as well and gives you the heavenly pleasure of the hot-cold opposites. Before I’ve met with Olly I’ve never imagined the taste of chilly in a dessert, but after this experiment, I highly recommend you to give it a try!

Bonfire torta
Tegnap a férjemmel közösen részt vettünk egy chilli élmény programon, ahol a profi túravezetőnk Chilli Olly megmutatta, hogy az Edible Ornamentals chilli ranch-on milyen módszerrel termesztik a különféle chilliket, majd a fóliasátrak között tett séta után lehetőségünk volt megkóstolni különféle friss chilli paprikákat, szószokat és mártásokat miközben utazást tettünk a Scoville skálán a kevésbé csípős szintttől az igazán tüzesig. Némelyik olyan mintha tábortüzet raknál a szádban.
Olly azt szeretné megmutatni az embereknek, hogy a chillit az ízéért fogyasszuk és ne csak az élményért amit a kapszaicin okoz a szervezetünkben egyre növekvő forróságérzet formájában. Számomra ez nagyon szimpatikus elgondolás, így hát abban maradtunk, hogy néhány projekten együtt dolgozunk majd a jövőben.
Ezen közös munka első eredményeként született meg ez a recept, ami egy Victoria piskóta típusú desszert egy kis csavarral: a hagyományos lekvár helyett ez úttal Olly egyik saját alkotását használtam a Nutty Professor termékcsaládból, ami a Bonnet Berry Burst névre hallgat. Ez egy bogyós gyümölcsökből és meggyből készült lekvár és Scotch Bonnet chilli keveréke. A séf javaslata az volt, hogy készítsek egy Viktória piskótát, de én némiképp változtattam az eredeti recepten és mivel egy új tortának szüksége van egy névre is, a Bonfire-t választottam.
HOZZÁVALÓK
- 6 tojás
- 130 g cukor
- 60 g kakaópor átszitálva
- Só
- 1 kisksanál fahéj
- Stabilizált vaníliás tejszínhab
- Bonnet Berry Burst lekvár a Nutty Professor-tól
ELKÉSZÍTÉS
- A tésztához különválasztottam 6 tojást.
- A tojássárgákat robotgéppel elkevertem a cukorral, majd belekevertem az átszitált kakóport, egy csipet sót és egy kiskanál fahéjat.
- Ezután kemény habbá vertem a tojásfehérjét és óvatosan beleforgattam a kakaós tojássárgás keverékbe, majd egyenletesen elterítettem egy közepes, piskótatekercs sütésre használatos tepsiben (kb. 1,5-2 cm vastagon álljon a tészta benne) mivel arra a döntésre jutottam, hogy kis tortácskákat készítek.
- A tésztát 180 °C-on, tűpróbáig sütöttem.
- Amint a piskóta meghűlt nagy, kerek kiszúró formával kiszúrtam a tortalapocskákat (2 db, tortánként).
- Az alsó lapot megkentem a Bonnet Berry Burst lekvárral.
- Ezt követően stabilizált vaníliás tejszínhabot nyomtam rá, ezt szintén megcsepegtettem a lekvárral.
- Végül lezártam a felső tortalappal.
- A tortácska tetejét kidíszítettem a tejszínes krémmel, megszórtam porcukorral, étcsoki reszelékkel és egy szem friss meggyel koronáztam meg.
A fűszeres ízű, chillivel megbolondított bogyós lekvárt kitűnően egyensúlyozza a tejszínes krém és a légies kakaós piskóta. Csodálatos élmény amikor elkezded érezni a jellegzetes forróságot, de ott a krém ami megadja neked a hideg-meleg ellentétek mennyei élvezetét. Mielőtt Olly-val találkoztam, nem tudtam volna elképzelni a chilli ízvilágát egy desszetben, de ezen kísérlet után mindenképp javaslom, hogy Te is adj neki egy esélyt és próbáld ki!
