Avocado matcha latter cheesecake

In this post I will show you a bit unusual recipe on the blog. Since I have no any discovered food intolerance, I can use basic ingredients without any problems and this is the reason why I don’t really post about recipes fit to the diet of people with food allergies, to be honest there are plenty of other sites and blogs based only on this topic. But a few months ago I’ve started to follow the work of Sasha O’Connor, and I really love that she found inspiration in a difficult situation.

After her food intolerance was discovered, she didn’t give up yummy desserts or tasty food, but started to create the ‘free from’ versions of her favorites, then as a result of her new passion she opened her own bakery, to share these gorgeous desserts with the public. At Lively Bakery all the products made with love from locally produced ingredients and you can find their goods at local markets and some cafès of Nova Scotia.

When food intolerance became a word-wide problem, the first products haven’t given that nice taste experience as their normal variants. By the time, creative minds -like Sasha- made their experiments with alternative ingredients, so nowadays all people suffering from any food allergy can enjoy almost every dish and dessert with the same or better taste result than the original.

Before I’ll show you my chosen recipe, let me to introduce Sasha…

Sasha, you have your own bakery. When did you discovered that you have passion about baking?
I started my bakery about 4 years ago, just because I did develop gluten and dairy intolerance and I really like desserts, but nothing what I tried was good as my grandma‘s. It was a lot of experiments and researches, a leaned a lot for last 4 years, an architect by trade, I becomes a baker.

What’s your favorite creation what you are the most proud of?
Favorite creation, it’s difficult question… I love all my recipes. If I have to pick one –Medovnic probably is one that I proud most. Especially make without dairy and refined sugar.

What are your inspirations?
My inspiration was and still old classic recipes, especially the recipes from my grandma‘s kitchen. I want develop gluten and dairy free recipes which taste like “normal” ones.

Name your favourite ingredient you think people should be using more when they bake something at home.
If you ask me about ingredient which I think underestimated in cooking, I will say herbs. We grow own herbs and use it a lot at home and at the bakery.

You have a unique style in flat lay photography. Could you share your top food styling tip to get a perfect flat lay?
Food styling tip… first of all thank you for the compliment, I’m still leaning every day. I guess my tip will be “Balance” nothing should be random and “Light”. Before I take picture, even before I do the settings I thinking about what I want to say, what kind of message, mood, taste.

INGREDIENTS

Crust

• 1 cup almond flour
• ½ cup sorghum flour
• ¼ cup coconut flour
• ¼ cup tapioca flour starch
• ½ cup raw cane or coconut sugar
• 1 tsp xanthan gum
• ½ tsp baking powder
• ¼ tsp nutmeg
• 3/4 cup vegan butter
• 1 tsp vanilla paste

Filling

• 2 cups avocado puree -about 4 avocados- drizzled with lemon juice
• ½ cup maple syrup
• 1 tbsp vanilla paste
• 4 free range eggs separated
• 1 tbsp matcha powder
• ¼ cup corn starch
• 2 tbsp xanthan gum
• 1 cane full fat coconut milk chilled
• 1 pinch of sea salt
• 1 tbsp chocolate liquor
• Boiling water
• Chocolate ganache for the topping

INSTRUCTIONS

1. Preheat oven to 175° C. Line bottom of 9″ cake pan with parchment paper. Cut a 23×5″ strip of parchment, butter or oil parchment, and line sides of pan.
2. Spread the crust in the bottom of the cake pan, bake for 18 minutes. Let’s it cool completely before adding fillings.
3. Place the coconut milk –if you keep cane with coconut milk in the fridge 24 hours it’s separate on the coconut water and a fat, use fat only, reserve coconut water for another recipe- in the heavy bottom medium size pot, hit it up over low-medium heat add matcha powder, stirring well. Let it cool down.
4. Meanwhile place the avocado puree in the standing mixer with maple syrup bit it on medium speed until fully incorporated. Add the flour, the vanilla paste and eggs yolks, mix it well.
5. When the matcha latter cooled, add it into the avocado mix and bit it well on medium speed about 2-3 minutes. Add chocolate liquor.
6. Using an electric mixer on high speed, whip egg whites with pinch of sea salt in another large bowl until stiff peaks form. Add a small portion of egg whites to avocado mixture and stir with spatula just until combined. Gently fold in remaining egg whites in 2 additions until just combined.
7. Pour batter into prepared pan. Wrap the pan in a foil, to prevent water from coming in the pan. Place pan in a baking dish or roasting pan and add boiling water to reach halfway up sides of cake pan. Bake cheesecake until set, about 1-1,5 hours.
8. Turn off the oven. Leave the oven door ajar for 10 minutes, then transfer to a wire rack and let cool completely.
9. Remove cheesecake from pan, transfer to a platter, spread generous layer of chocolate ganache in the top of cheesecake, and chill in the fridge at least 4 hours or up to overnight.
10. For serving sprinkle with matcha powder.

Ebben a posztban egy, a blogon nem túl szokványos receptet mutatok be. Mivel nincs semmilyen igazolt ételallergiám, a főzés során bármilyen alapanyagot gond nélkül használhatok és ebből kifolyólag nem is nagyon írok olyan ételekről amelyek speciális étrendekbe illeszkednek, hiszen rengeteg oldal és blog foglalkozik kimondottan ezzel a témával. Azonban pár hónapja elkezdtem követni Sasha O’Connor munkásságát és igazán nagyra becsülöm, hogy egy nehéz helyzetben is megtalálta az inspirációját.

Miután felfedezték az ételallergiáját, nem adta fel az édességek és a finom ételek élvezetét, épp ellenkezőleg: elkezdte megalkotni a kedvenc ételei és desszertjei ételallergiások által is fogyasztható verzióit és az új szenvedélye eredményeként megnyitotta a saját pékségét, hogy a nagyközönséggel is megoszthassa a finom süteményeit. A Lively Bakery termékei a környéken termelt alapanyagokból, szeretettel készülnek és a süteményeik megtalálhatóak Új-Skócia piacain és kávézóiban is.

Amikor az ételallergia világméretű problémává nőtte ki magát, a legelső termékek még nem nyújtották azt az ízélményt amit a hagyományos verzióik. Idővel a kreatív beállítottságúak -mint Sasha-, alternatív alapanyagokkal kezdtek kísérletezni, így manapság már mindenki aki valamely típusú ételallergiától szenved, majdnem minden ételt teljes értékűen tud élvezni, azonos vagy még nagyszerűbb ízélménnyel mint az eredeti.

Mielőtt rátérünk az általam választott receptre, engedd meg, hogy bemutassam Sashát…

Sasha, saját pékséget nyitottál. Mikor fedezted fel a sütés iránti szenvedélyedet?
Nagyjából 4 éve indítottam a pékségemet, mivel glutén és tejtermék allerga alakult ki nálam és igazán szeretem a desszerteket, azonban amiket próbáltam nem voltak annyira jók mint a nagymamámé. Az elmúlt 4 évben sokat kísérletezgettem, kutattam és tanultam, szakmámat tekintve építész vagyok, de pék lettem.

Melyik alkotásod a kedvenced, amelyikre a legbüszkébb vagy?
Kedvenc alkotás… nehéz kérdés. Minden receptemet szeretem. Ha mindenképp választanom kell egyet, akkor talán a Medovnic amire a legbüszkébb vagyok. Kiváltképp tejtermékek és finomított cukor nélkül.

Miből merítesz ihletet?
Az inspirációt minding is a régi klasszikus receptek adták, kiváltképp a nagymamám receptjei. Olyan glutén és tejmentes recepteket szeretnék kifejleszteni, amelyek éppolyan finom ízűek mint a ‘rendes’ társaik.

Nevezd meg a kedvenc alapanyagodat, amit az embereknek gyakrabban kellene használniuk, ha otthon sütnek.
Ha arról az alapanyagról kérdezel, amelyet alábecsülnek a főzéskor, akkor a fűszernövényeket említeném. Mi a saját fűszernövényeinket neveljük és rengetegszer használjuk őket otthon és a pékségben egyaránt.

Sajátos stílusú felülről fotózott, úgynevezett ‘flat lay’ képeket készítesz. Megosztanál egy fontos beállítási tippet ami elengedhetetlen a tökéletes ‘flat lay’ -hez? 
Beállítási tippek… először is köszönöm a bókot, továbbra is új dolgokat tanulok nap mint nap. Azt gondolom, hogy a tanácsom az ‘Egyensúly’, semmi ne legyen vélatlenszerű, valamint a ‘Fény’. Mielőtt fotózok vagy beállítom a képet, elgondolom, hogy mit szeretnék kifejezni, milyen üzenetet, hangulatot, ízt.

És most nézzük, mire esett a választásom ebben a receptcserében…

HOZZÁVALÓK

Tészta

• 250 ml mandula liszt
• 125 ml cirok liszt
• 65 ml kókusz liszt
• 65 ml tápióka liszt (keményítő)
• 125 ml finomítatlan nádcukor vagy kókuszcukor
• 1 kanál xanthán
• ½ kiskanál sütőpor
• ¼ kiskanál szerecsendió
• 190 ml vegán vaj
• 1 kiskanál vanília paszta

Töltelék

• 500 ml avokádó püré -kb. 4 avokádó- citromlével meglocsolva
• 125 ml juharszirup
• 1 kanál vanília paszta
• 4 tojás – szétválasztva
• 1 kanál matcha tea por
• 65 ml kukoricakeményítő
• 2 kanál xanthán
• 1 konzerv zsíros kókusztej hűtve
• 1 csipet tengeri só
• 1 kanál csokilikőr
• Forró víz
• Csokikrém a torta bevonásához

ELKÉSZÍTÉS

1. Melegítsd elő a sütőt 175° C-ra. Bélelj ki egy 23 centis tortaformát sütőpapírral az alján és az oldalán is.
2. Dolgozd össze a tészta alapanyagait.
3. Terítsd el a tésztát a tortaforma alján, majd süsd 18 percig. Hagyd teljesen kihűlni mielőtt rárétegezed a tölteléket.
4. Tedd a kókusztejet a hűtőbe 24 órával a felhasználáés előtt- így a kókuszvíz és a zsíradék elválik egymástól. Csak a zsíradékot használd, a kókuszvízet tedd férre egy másik recepthez. Tedd a zsiradékot egy lábasba, melegítsd közepes hőfokon és keverd hozzá a matcha teát. Hagyd kihűlni.
5. Idő közben tedd az avokádó pürét a mixerbe a juharsziruppal és közepes sebességen keverd simára. Add hozzá a keményítőt, vanília pasztát, xanthánt és a tojások sárgáját, majd dolgozd össze az alapanyagokat.
6. Amikor a Matcha latte lehűlt, öntsd az avokádós keverékhez és 2-3 percen át rendesen keverd ki őket. Add hozzá a csokilikőrt.
7. Használd a mixert magas fokozaton és verd fel a tojásfehérjéket a sóval. Adj egy kis adag fehérjehabot az avokádókrémhez és egy spatulával forgasd bele. A maradék habot kétszerre adagold a krémhez.
8. Öntsd a krémet a tortaformába és tekerd a tortaformát fóliába -én egy nagy sütőzacskóba ültettem- ami nem engedi majd, hogy a víz belefolyjon. Tedd a tortaformát egy tepsibe, öntsd fel forróvízzel a forma közepéig. Süsd a tortát 1-1,5 órán át, amíg már nem folyós. Mielőtt kivennéd a sütőből, hagyd nyitva a sütő ajtaját 10 percig, majd ez után tedd egy hűtőrácsra, ahol teljesen hagyd kihűlni.
9. Vedd ki a tortát a formából, helyezd egy tortaállványra és bőségesen vond be csokikrémmel és hűtsd legalább 4 órán vagy egy éjszakán át.
10. Tálalás előtt szórd meg Matcha porral.
