Christmas is on the corner so it’s time to thinking about one of the most important elements of the festive decoration: gingerbread. But this year instead of sharing my family recipe, I will show you how to prepare Swedish ginger thins, which is my new favorite since I’ve tried them at IKEA and then in Sweden.
Pepparkaka is totally different from the Central European soft gingerbread cookies, it’s more thin and crispy. As I’ve noticed, Swedish people love to dunk them into äpple glögg (apple glögg).
If you want to try something different but still familiar this year, give a try to Pepparkaka instead of your usual gingerbread recipe, I’m sure everyone will enjoy to eat them. Let’s decorate their surface with royal icing and use the cookies as wonderful decorations on your Christmas tree or as edible gifts for your beloved ones.
INGREDIENTS
- 500 g flour
- 100 g muscovado
- 100 g sugar
- 100 g honey
- 75 ml water
- 150 g butter
- 2 tbsp ground cinnamon
- 1 tbsp ground ginger
- 1 tbsp ground cloves
- 1 tsp cardamom
- 1 tsp baking soda
- Royal icing, sprinkles – as decoration
INSTRUCTIONS
- Add the muscovado, sugar water and honey into a pot, stir them together and heat up this thick mixture.
- Add the butter and stir it till it melts.
- Remove the pot from the heat, let it cool for a few minutes then incorporate the spices and the baking soda.
- Mix in the sifted flour in 3 portions till you get a smooth consistency.
- Wrap the dough into cling film and chill it for 2-3 hours or it’s much better if you chill it longer for example overnight.
- Let’s knead the dough to get a smooth texture again. On a lightly floured surface roll it to get as thin dough as thin one you can still handle without any problems.
- Use cookie cutters to cut lovely shapes out of the dough and place them to a lined baking tray.
- Bake the cookies in a pre-heated oven on 180°C for about 8 minutes.
- Let the ginger thins to cool completely on an even surface or cooling rack.
Keep the cookies in a sealed plastic box to keep them crispy!

For dark brown Pepparkaka biscuits, replace 2 tbsp flour by 2 tbsp cocoa powder.

Pepparkaka – a svéd mézeskalács
A Karácsony már itt van a küszöbön, így hát ideje gondolni az ünnepi dekoráció egyik legfontosabb elemére: a mézeskalácsra. Idén nem a családi mézes receptjét, hanem a svéd mézeskalácsét osztom meg Veled, ami a legújabb kedvencem mióta kipróbáltam az IKEA-ban, majd Svédországban is.
A Pepparkaka teljesen különbözik a közép-európai puha mézeskalácstól, sokkal vékonyabb és ropogósabb. Ahogy észrevettem, a svédek imádják a äpple glögg-be (alma glöggbe) tunkolni!
Ha ki szeretnél próbálni valami újat, de mégis ismerőset idén, adj egy esélyt a Papparkaka-nak, a hagyományos mézes recepted helyett, biztosra veszem, hogy mindenki imádni fogja. Díszítsd a felületüket írómázzal és használd fel őket a karácsonyfád díszeként vagy gasztroajándékként.
HOZZÁVALÓK
- 500 g liszt
- 100 g lágy barnacukor
- 100 g cukor
- 100 g méz
- 75 ml víz
- 150 g vaj
- 2 kanál fahéj
- 1 kanál őrölt gyömbér
- 1 kanál őrölt szegfűszeg
- 1 kiskanál őrölt kardamom
- 1 kiskanál szódabikarbóna
- Írómáz, szórócukor – díszítéshez
ELKÉSZÍTÉS
- Mérd ki a lágy barnacukrot, cukrot, vizet és mézet egy lábasba, keverd őket össze és melegítsd fel a masszát.
- Olvaszd fel benne a vajat.
- Vedd le a lábast a tűzről, hagyd pár percig hűlni, majd keverd hozzá a fűszereket és a szódabikarbónát.
- Keverd bele az átszitált lisztet -három adagban- amíg egyenletes állagú tésztát kapsz.
- Borítsd be a tésztát folpackkal és hűtsd 2-3 óráig, de még jobb ha hosszabb ideig a hidegen van, mondjuk egy éjszakán át.
- Gyúrd át a tésztát. Amikor már sima állagú, enyhén lisztezett felületen nyújsd olyan vékonyra amit még gond nélkül kezelni tudsz.
- Használj kiszúróformákat a tésztaalakzatok kivágásához és rakosgasd őket egy sütőpapírral borított tepsire.
- Süsd a kekszeket előmelegített sütőben, 180°C-on kb. 8 percig.
- Hagyd a kekszeket teljesen kihűlni egyenes felületen vagy rácson.
Tárold a mézeseket jól záró dobozban, hogy megőrizhesd a ropogósságukat!
Sötétbarana mézeskalácsokhoz 2 kanál lisztet helyettesíts 2 kanál kakaóporral.
